Food safety & hygiene level 2
Overview
The Food Safety & Hygiene level 2 course is a requirement for everyone onboard that deals with the preparation or handling of food, so this involves both the chefs and stewardesses and stewards in the interior department.
The course is a one day course and is designed to provide individuals with the knowledge of how to safely and hygienically store, handle, cook and serve meals onboard.
Working as a stewardess or chef in the superyacht industry is a career like no other. The starting salary for an entry level Stewardess is around €2,500 per month, and a chef can be even higher, tax-free depending on your nationality, and that excludes any additional tips you may receive from the likes of Justin Bieber, Beyoncé or J-Lo. Keep in mind that accommodation, food, uniform and basic toiletries are all included onboard so you have the potential to save large amounts, all whilst being paid to travel the world!
Under the British Maritime Labour Convention (MLC 2006) all Ships Cooks, catering staff and other processing food in the galley are required to be suitably qualified in Food Hygiene or Food Safety in Catering.
Food Safety & Hygiene Level 2 Course
All superyacht crew who are tasked with the preparation or handling of food, must attend this basic food safety course. After you have completed the course you will have a much clearer understanding on the fundamentals of food and hygiene safety protocols onboard. This extends to correct storage, preparation, cooking and handling of all food.
The aim of this qualification is to provide individuals with a deeper knowledge and understanding of basic food safety practices and hygiene for better health. This includes understanding the hazards and risk to food safety and crew health. The course teaches you the cost-effective, practical control measures that will allow you to safety control the hygiene hazards that can lead to poisoning and foodborne illnesses and contamination.

This Level 2 course will inform you of your legal responsibilities, and constitutes best practice in regards to controlling food safety hazards, controlling temperatures, food starge, food preparation, personal hygiene, and premises cleaning. You will learn about your responsibilities through a range of interactive exercise, written text and video content. Upon completion of this training, you will be confident in your food hygiene knowledge and have all the skills and tools you need to keep people safe and comply with food hygiene law.
